Chia pudding makes dessert healthy. It’s keto friendly, paleo approved, and even fits the vegetarian/vegan diet.
Chia pudding is a special treat that is one of a kind. I’ve yet to find anything that satisfies my sweet tooth while also checking so many boxes for intersectional foodies. It’s loaded with wholesome nutrition and won’t blow out your macros or destroy you daily calorie allowance.
I hate long introductions for recipes. (Recipe blogs are unbearable, partly for this reason. But people love to eat, so they aren’t going anywhere.) All you need to know is that chia pudding is delicious, nutritious and easy to make. Without further ado, here are the goods:
How to Make Chia Pudding
You only need 2 ingredients to make the base. 1) raw chia seeds 2) almond milk. After that, you can add any toppings or sweeteners you like.
- Get yourself a mason jar with a lid. (Get 16-ounce jars because they leave room for toppings and won’t spill.)
- Add 1 cup of unsweetened almond milk for every 3-4 tablespoons of chia seeds. Fill the jar about 2/3rds of the way full. Optional: Add sweetener and a drop or two of real vanilla extract. For sweetness I like organic honey, date syrup or pure cane sugar.
- Put the chia seed pudding mixture into the refrigerator and let it chill for 2 hours.
- Add toppings and chow down.

The toppings are the best part. I add some combination of berries, nuts, coconut, cocoa, hemp seeds and sliced fruit.
Chia pudding kills cravings when you’re on a diet. It’s good for you and loaded with nutrients. It’s got healthy fat, fibre, and a stellar vitamin and mineral profile.
The only draw back to chia pudding is the wait time. This problem is easily solved by preparing it ahead of time. Preferably in bulk. It keeps fresh for 3-4 days in an airtight container.
Okay, the second drawback is that chia seeds get stuck in your teeth. have some dental floss handy, especially if you eat it at work. Otherwise you will look like a goober with gobs of chia mashed in your gums and teeth.
Pro Tip: Make chia pudding before you leave for the gym. Go workout then come home and enjoy a tasty post-workout snack.
