Here’s a simple recipe for healthy turkey meatloaf. It’s surprisingly meaty, juicy and lean. Meatloaf is easy to make and tastes great. You can also make it in bulk, so it’s perfect for meal prep. (Just double or triple the recipe.)
Worth mentioning: Never be intimidated by cooking. If you think you can’t cook, you’re wrong. If you can read you can cook. Just follow the instructions. You don’t have to be Bobby Flay to pull this off.
Now, let’s see what’s cooking…
Healthy Turkey Meatloaf Ingredients
1 pound 93% Lean Turkey, ground
1 medium onion, diced
3-4 cloves of garlic, minced
1 whole egg (2 eggs if you double or triple the recipe)
Small handful of chopped parsley
1/4 cup fresh grated parmesan cheese
2 tablespoons steel-cut outs. Pulsed in a food processor.
3/4 tablespoon salt
1/4 black pepper
Pinch of cayenne pepper
Meatloaf glaze:
2 tablespoons Ketchup
2 tablespoons soy sauce
1/2 teaspoon minced garlic
A little flavor from the Chef: The eggs add a richer flavor and help give the turkey a fluffy yet firm texture. Onions help make the meatloaf moist.
How to Make Turkey Meatloaf
- Sauté onions and garlic in a little bit of olive oil. Cook until the onions start to look clear.
- Mix ground turkey, onions, garlic, eggs, parsley, parmesan, oats and spices together in a big bowl. Just mash it all together with your hands until the ingredients are evenly distributed. (Wash your hands and disinfect any surface that touches turkey to avoid food born illnesses, or worse.)
- Make the Glaze: Add ketchup, soy sauce, garlic and pepper to a bowl and whisk until smooth.
- Pack mixture into a meatloaf pan, spread the glaze over the top and cover tightly with tin foil. Toss it in the oven and bake at 375 degrees for until done. (About 40-50 minutes.)
Bake until the turkey looks brown. Make sure it’s cooked thoroughly. You don’t want to mess with raw turkey. (Get a meat thermometer to ensure it’s cooked to a safe eating temperature.) Bake covered to seal in the juices. Then take off the tin foil during last 5 minutes or so to set the glaze. When the glaze congeals a bit take that puppy out of the oven.
All that’s left to do is slice and serve (with veggies.)
Mmmmmhhhmmmmmm….
